5 Common Pizza Dough Mistakes and How to Fix Them 🚫
Baking the perfect pizza is incredibly rewarding, but it’s also full of potential pitfalls. If you’ve ever ended up with a tough crust or dough that refuses to stretch, you’re not alone.
Here are the 5 most common mistakes and how to fix them:
1. Using the Wrong Flour 🌾
Not all flour is created equal. Using standard cake flour or low-protein all-purpose flour won't develop the gluten network needed for a chewy, stretchy crust. The Fix: Always look for high-protein flour. "00" flour is best for high-temperature ovens (like an Ooni), while Bread Flour is excellent for home ovens.
2. Killing the Yeast 💀
Yeast is a living organism. If you dissolve it in water that is too hot (above 120°F / 49°C), it will die, and your dough won't rise. The Fix: Use lukewarm or room-temperature water. If you're doing a long cold fermentation, you can even use ice water!
3. Not Kneading Enough 🦾
If your dough tears easily when you try to stretch it into a pizza shape, the gluten hasn't been developed enough. The Fix: Knead your dough until it passes the "Windowpane Test" (you can stretch a small piece of dough until it's translucent without tearing).
4. Skipping the Rest Period ⏱️
Dough needs time to relax. If it keeps snapping back like a rubber band when you stretch it, it’s too tense. The Fix: Let your dough balls rest at room temperature for at least 2-4 hours before stretching. If they still fight back, cover them and wait another 30 minutes.
5. Over-Topping the Pizza 🍅🧀
We all love toppings, but too much sauce or cheese will weigh the dough down, resulting in a soggy, undercooked center. The Fix: Less is more! A traditional Neapolitan pizza only uses about 2-3 tablespoons of crushed tomatoes and a sparing amount of cheese.
